Tiger Rolls
Equipment
- Stand mixer
- Baking sheet
- Pastry brush
- Small clean bowl
Ingredients for the rolls
- 360g Strong white bread flour
- 6g salt
- 12g Granulated sugar
- 5g Instant yeast
- 40g Olive oil
- 220g Warm water
Ingredients for the Rice flour paste
- 75g Rice flour
- 3g Instant yeast
- 12g Granulated sugar
- 9g Olive oil
- 2g Salt
- 90g Warm water
Instructions
- Add 6g Salt to the mixer bowl
- Add 360g Strong white bread flour to the mixer bowl
- Add 12g Granulated sugar to the mixer bowl
- Add 5g Instant yeast to the mixer bowl
- Gently mix the contents of the mixer bowl with a spoon and make a well in the middle
- Add 40g olive oil to the mixer bowl
- Add 220g Warm water to the mixer bowl
- Mix on medium speed for 8 minutes and then continue mixing until the dough is coming away from the bowl
- Turn out the dough onto a clean surface and then lightly oil the inside of the mixer bowl
- Gather the dough into a ball and place back into the mixer bowl, turning the dough over a few times to ensure it is covered in the oil. This stops it drying out
- Cover the bowl with clingfilm or a damp teatowel and leave in a warm place for 1 hour
- Turn out the dough onto a clean surface and divide into 4 (Large rolls) or 8 (Small dinner rolls)
- Shape the pieces into rolls by tucking the edges underneath, forming balls and placing them on a lined baking sheet
- Cover with clingfilm or a damp teatowel and eave somewhere warm for 20 minutes
- Add 2g salt to a clean bowl
- Add 75g Rice flower to the clean bowl
- Add 12g Granulated sugar to the clean bowl
- Add 3g Instant yeast to the clean bowl
- Add 9g olive oil to the clean bowl
- Add 90g Warm water to the clean bowl
- Mix the contents of the bowl with a spoon until a smooth paste is formed
- Uncover the rolls and then generously paint the paste over the top of the rolls with a pastry brush, try not to knock any air out of the dough when doing so
- Recover the rolls and leave somewhere warm for 20 minutes
- Turn on the oven at 200c/400f (180c fan) and wait for it to come up to temperature
- Uncover the rolls and place them, on the baking sheet, on a shelf in the center of the oven
- Remove the rolls from the oven after 25 minutes
