Easy Vegetarian Biryani

- Large microwaveable bowl

ingredients
- 200g Basmati rice
- 350g Frozen mixed vegetables
- A large handful of Raisins
- 1 Vegetable stock cube
- 2 tablespoons of Korma curry paste
- A large handful of Roasted salted cashew nuts
Instructions
- Fill a kettle with water and turn it on
- Weigh 200g basmati rice into a large microwaveable bowl
- Weigh 350g frozen mixed vegetables into the bowl
- Add a large handful of raisins to the bowl
- Add 2 tablespoons of korma curry paste to the bowl
- Crumble 1 vegetable stock cube into the bowl
- Measure 550ml of boiling water with a measuring jug and then pour it into the bowl, stirring everything together thoroughly
- Cover the top of the bowl with clingfilm, leaving a small gap for steam to escape out of
- Microwave for 20 minutes at full power.
- Leave the bowl to stand for a further 5 minutes still covered
- Uncover and stir through to make sure everything is well mixed
- Spoon a desired portion into a bowl (should serve 3 or 4 people) and then scatter some roasted salted cashew nuts over the top
