Instructions

  1. Fill a kettle with water and turn it on
  2. Weigh 200g basmati rice into a large microwaveable bowl
  3. Weigh 350g frozen mixed vegetables into the bowl
  4. Add a large handful of raisins to the bowl
  5. Add 2 tablespoons of korma curry paste to the bowl
  6. Crumble 1 vegetable stock cube into the bowl
  7. Measure 550ml of boiling water with a measuring jug and then pour it into the bowl, stirring everything together thoroughly
  8. Cover the top of the bowl with clingfilm, leaving a small gap for steam to escape out of
  9. Microwave for 20 minutes at full power.
  10. Leave the bowl to stand for a further 5 minutes still covered
  11. Uncover and stir through to make sure everything is well mixed
  12. Spoon a desired portion into a bowl (should serve 3 or 4 people) and then scatter some roasted salted cashew nuts over the top
